While October may be over, the pumpkin craze is not! In my book, pumpkin recipes are acceptable well through the holiday season (and sometimes even after. Shhh....). This smoothie really makes it feel like Fall, and hits the spot when you're craving something sweet but not too sweet. The pumpkin adds a savory element while also providing extra fiber, and the pumpkin pie spice packs so much punch without adding any sugar! The mixture of these flavors with almond butter can only be described as 'pumpkin buttercup', and we wouldn't have it any other way.
Serves 1
1/2 c. pumpkin puree, unsweetened
2 tsp. pumpkin pie spice (we love the one from Trader Joe's)
2 dates, pitted
1 serving vegan vanilla protein powder
1/2 c. ice
1 frozen banana
1 c. unsweetened vanilla almond milk or oat milk (we love Mooala brand)
1 Tbsp. ground flaxseed
2 Tbsp. almond butter
Place all ingredients in a blender and blend until smooth. Top with a sprinkle of pumpkin pie spice. Enjoy!
