I can't get enough of this tangy and bright salad dressing. When a local Austin company called Luna Fixa sent me a tube of their golden paste to try a few weeks back, I knew after tasting it that it would be the perfect ingredient for a simple summer salad dressing. Full of immune boosting and anti-inflammatory ingredients, golden paste is made up of turmeric powder, coconut oil, black peppercorns, and Ayurvedic spices. Not only is it delicious, but the color is out of this world, too.
With a subtle taste of turmeric, this recipe is a nice departure from my typical go-to Dijon dressing. Note: if you don't have any turmeric paste on hand, there are plenty of recipes online showing how to make your own, using turmeric powder, coconut oil, black peppercorns, and water. This one seems to have gotten a lot of good reviews, though we've never tried it!
Makes 6 oz of dressing (enough for 2-3 salads)
1 tbsp. Luna Fixa Golden paste
1/4 c. Extra virgin olive oil
1/8 c. Red Wine Vinegar
Splash of apple cider vinegar
Juice of half a lemon
1 tsp. Maple Syrup (optional)
Salt + Pepper to taste
Put all ingredients in a mason jar with a lid and shake shake shake until smooth. Taste and adjust salt as needed. Stays well in the fridge for 3-4 days!
To serve: I served it over a simple salad of mixed greens + cubed avocado.
