Guacamole is hands-down one of my favorite foods - I could eat it at breakfast with eggs, on a wrap at lunch, at dinner with protein, as a snack with veggies... you name it! I'm game for guac.
I came up with this 'creamy' walnut version to spice things up a little in the crunch department, and added a little bit of dairy-free coconut based yogurt for creaminess (you won't get any coconut taste, I promise!). The crunch and creaminess combined with the brightness of the red peppers, jalapeño, and lemon juice works really well together, and is great when you're sick of making the same classic guac recipe over and over.
Yields 1 small bowl (appetizer size!)
3 small avocados
1/4 c red onions, chopped
1/3 chopped walnuts, chopped
1/4 Culina dairy-free yogurt in the plain + simple flavor
1 Jalapeño, seeded + diced
Juice of 1 lemon
Salt to taste
Cilantro (for garnish)
Lightly mash the avocados with a fork until they're in smaller chunks - be sure not to over-mash (this isn't avocado soup!). Gently fold in the red onions, walnuts, and jalapeño. Mix, and then add the lemon juice, yogurt, and salt to taste. Garnish with cilantro, and serve with chips (Siete are one of our faves, and pictured below!), or fresh veggies. Enjoy!
