Rustic Caprese Salad

Not sure what to do with those September tomatoes that are still in season, but don't want anything too fancy? This casual take on the traditional caprese salad makes it "scoopable", approachable, and appropriate for any dinner party you're invited to. No-frills, so delicious.


Note: We always use buffalo mozzarella because it's creamy deliciousness is unbeatable, but any mozzarella will do! Run, don't walk to the Farmer's Market while you can still get your hands on some local tomatoes!!


Rustic Caprese Salad

Serves 4-6

4 large heirloom tomatoes, sliced into half-moons

4-6 oz buffalo mozzarella, gently ripped or chopped into bite size pieces

1/2 C. fresh basil leaves, roughly chopped 3 TBSP good quality extra virgin olive oil

Salt to taste

Directions: add tomatoes, mozzarella and basil to a serving bowl or platter, gently mixing together. Immediately before serving, top with olive oil and salt. Enjoy!
